This Week's Menu

Here is what we're eating this week:

  • Sunday lunch: Spaghetti and Meatballs (this was straight from the freezer, a quick after-church meal)
  • Sunday dinner: Potato skins
  • Monday: Baked Egg Rolls
  • Tuesday: Goulash, Black Beans, Broccoli
  • Wednesday: Chicken, Bean, Rice Wraps (I'll make extra for the freezer!)
  • Thursday: Ham on the Grill
  • Friday or Saturday: Grilled Pizzas
* We usually eat out once on the weekends. If not, there are usually leftovers, or we scrape something together out of the pantry/freezer. :)

Last Night's Dinner

Ok, this is one of my new favorite meals thanks to Ranie. I hope she doesn't mind my sharing her recipe. Oh, and another plus - it can be made in the crockpot and microwave! This is my favorite "New Orleans-style food" that I can make at home.

Red Beans and Rice
1 can of Red Beans
1 can of Rotel (skip this if you don't like a little heat)
2 bullion cubes (I use chicken flavor)
1 green onion, chopped
1 smoked sausage - sliced(I use the Healthy Choice turkey sausage...yummy and a little more SBD friendly!)

Combine all of the ingredients in a crock pot and let cook until warm or all day. Serve with rice (cooked in the microwave if you want to avoid turing on the stove)- here again, I use brown rice to fit this into my SBD frame of mind.
