A Quick Meal

Ok, here is one I love for a quick fix. It doesn't have a name.

1/2 a package of Kielbalsa, cut into slices
2 Potatoes, diced
1/2 yellow onion, chopped
1 zucchini, chopped
Seasoned salt to taste

Heat 2 tbsp of olive oil, add potatoes. After about 5 minutes, add other ingredients. Cook until potatoes are done, stirring frequently. My brood likes to eat it with ketchup.

Buffalo Chicken Dip

The other night I had a potluck and this is what I took. I served it with bread, but it is actually better with tortilla chips.


8oz cream cheese softened
1 C buffalo wing marinade (I used the Louisiana Brand and it was spicy!)
3/4 C ranch or blue cheese
1 C diced chicken
2 C shredded cheddar cheese (I used a Monterry Jack/Cheddar Blend)

Preheat oven to 350. Mix cream cheese and hot sauce till well blended. Mix in chicken, cheddar cheese and dressing. Spread in 13x9 dish and bake for 30 minutes.

Jalepeno Poppers Dip

I can't wait to try this...I love jalepeno poppers. Yummy!

JALAPENO POPPER SPREAD

INGREDIENTS
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

DIRECTIONS
Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
Microwave on High until hot, about 3 minutes.

Baked Variation
If you would like to brown the cheese, bake at 375 degrees F (190 degrees C) for about 30 minutes.
