Ok, this is one of my new favorite meals thanks to Ranie. I hope she doesn't mind my sharing her recipe. Oh, and another plus - it can be made in the crockpot and microwave! This is my favorite "New Orleans-style food" that I can make at home.
Red Beans and Rice
1 can of Red Beans
1 can of Rotel (skip this if you don't like a little heat)
2 bullion cubes (I use chicken flavor)
1 green onion, chopped
1 smoked sausage - sliced(I use the Healthy Choice turkey sausage...yummy and a little more SBD friendly!)
Combine all of the ingredients in a crock pot and let cook until warm or all day. Serve with rice (cooked in the microwave if you want to avoid turing on the stove)- here again, I use brown rice to fit this into my SBD frame of mind.

Dinner tonight - Shrimp!
Well, David teaches tonight so Bear and I are on our own for dinner. We'll be trying this recipe:
For me this is a Pantry Meal- things I have on-hand.
Shrimp
Can of White beans
Olive oil
salt
small or chopped shrimp ( I went for the frozen salad shrimp - they were same price as the canned and I can use just what I need.)
minced garlic
thyme leaves
Combine ingredients in pan. Cook, stirring until the shrimp are done. Garnish with more olive oil.
